- 1 lb (450 g) carrots, peeled and cut into sticks or rounds
- 2 tablespoons unsalted butter
- 2 tablespoons honey (preferably Back to the Hive's Pine Honey for the best flavour)
- 1 tablespoon brown sugar (optional, for extra sweetness)
- 1 tablespoon fresh lemon juice (optional, for a tangy flavour)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Prepare the Carrots:
- If your carrots are large, cut them into sticks or rounds of equal size to ensure even cooking. Baby carrots can be left whole or halved.

Cook the Carrots:
- Bring a pot of salted water to a boil. Add the carrots and cook for about 6-8 minutes, or until they are tender but still firm. Drain and set aside.

- In a large skillet, melt the butter over medium heat. Add pine honey and brown sugar (if using), stirring until the sugar has dissolved and the mixture is smooth.
