Ingredients:

  • 1 lb (450 g) carrots, peeled and cut into sticks or rounds
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey (preferably Back to the Hive's Pine Honey for the best flavour)
  • 1 tablespoon brown sugar (optional, for extra sweetness)
  • 1 tablespoon fresh lemon juice (optional, for a tangy flavour)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Carrots:

    • If your carrots are large, cut them into sticks or rounds of equal size to ensure even cooking. Baby carrots can be left whole or halved.
  2. Cook the Carrots:

    • Bring a pot of salted water to a boil. Add the carrots and cook for about 6-8 minutes, or until they are tender but still firm. Drain and set aside.
  3. Make the Honey Glaze:

    • In a large skillet, melt the butter over medium heat. Add pine honey and brown sugar (if using), stirring until the sugar has dissolved and the mixture is smooth.
  4. Glaze the Carrots:

    • Add the cooked carrots to the skillet, tossing them in the honey mixture until they are well coated. Cook for another 5-7 minutes, stirring occasionally, until the carrots are glazed and slightly caramelized.
  5. Season and Finish:

    • Add the lemon juice (if using), and season with salt and pepper to taste. Continue cooking for another minute or so, until the glaze thickens slightly.
  6. Serve:

    • Transfer the honey-glazed carrots to a serving dish. Garnish with chopped fresh parsley if desired.

Tips:

  • For a richer flavour, you can add a pinch of cinnamon or nutmeg to the glaze.
  • For extra texture, toss in some toasted nuts, like almonds or pecans, before serving.
